Chuy’s Authentic Tex-Mex Restaurant plans location at West Broad Village
Richmonders can soon avoid long trips to Texas to satisfy their Tex-Mex cravings. Chuy’s (CHOO-EEZ), an iconic Austin-based restaurant, will soon open a location in Short Pump’s West Broad Village community at 11229 West Broad St.
Set to open this spring, the restaurant will be Chuy’s first Virginia location. For more than 30 years, Chuy’s has been known for its affordable, quality Tex-Mex cuisine in a fun and eclectic atmosphere. It currently operates 40 restaurants across eight states.
“Chuy’s is excited to become part of the Richmond and Short Pump community,” said Ben Scarborough, local owner and operator. “We pride ourselves in our unique, made-from-scratch recipes, and we can’t wait to open the doors and share Chuy’s with RVA.”
The Chuy’s menu includes a mix of made-to-order enchiladas, chile rellenos, fajitas and burritos, using only the finest, freshest ingredients. Warm tortillas are hand-rolled throughout the day, while sauces like the famous Creamy Jalapeňo are made fresh every hour. A few signature items include Big As Yo’ Face burritos, Chicka-Chicka Boom-Boom Enchiladas and margaritas made with fresh-squeezed lime juice.
“The Chuy’s menu features dishes from authentic family recipes from South Texas, New Mexico and Mexican border towns,” added Scarborough. “We’ve always been committed to serving customers quality food. Every August when green chiles are harvested, we send our kitchen managers to the farms in Hatch, New Mexico, to ensure we choose only the freshest, highest quality peppers for our dishes.”
Located in West Broad Village, the 8,000 square foot restaurant is currently under construction. The restaurant will employ 175 people.
Customers can expect a few décor staples from Chuy’s, including an Elvis shrine, a room covered with hubcaps on the ceiling and several metal palm trees. Built under the idea of, “If you’ve seen one Chuy’s, you’ve seen one Chuy’s,” the West Broad Village location will feature elements unique to the community and will support relationships with local vendors.
The Richmond Chuy’s restaurant will be open seven days a week for lunch and dinner with a weekday Happy Hour from 4-7 p.m, featuring the Fully-Loaded Nacho Car, an unlimited build-your-own nacho station with chips, salsa, queso, taco meat and more.
